Aronia Berry Cake Recipe
At our meetup this past Saturday I baked a cake made with aronia berries from our farm. I thought I’d share the recipe here with you all. Aronias have even more antioxidants than blueberries! They are super easy to grow if you have a little bit of room in your back yard for a large shrub. They are also native to our region.

If you are a supporter at the “Friends” level or above, we welcome you to visit the farm and harvest a cup of berries to try them out with this recipe. Or if you’d rather try them in a smoothie, I have a nice recipe which I can give you when you come out.

Aronia berries
🫐 Aronia Berry Cake
- 1/2 cup melted coconut oil or butter
- 1 cup coconut sugar (or brown sugar)
- 2 eggs
- 1 1/2 tsp vanilla extract
- 1 c. buckwheat flour
- 3/4 cup almond flour
- 1/2 cup sliced almonds
- 1 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 c. fresh or frozen aronia berries
Directions:
- In a bowl, cream butter and sweetener
- Beat in egg and vanilla
- Combine buckwheat flour, almond flour, almonds, cinnamon, salt, baking powder and baking soda.
- Gradually add to the creamed mixture
- Stir in the aronia berries
- Pour into a lightly oiled 9″x13″ casserole pan
- Bake at 350 degrees for 30 minutes
